About Kristin Olafs and Baldur Benediktsson

Since Baldur was diagnosed as a celiac in November 2006, he and his wife Kristin have converted to a gluten-free diet. Initially discouraged by the scarcity of good gluten-free food and ingredients, they started experimenting with converting their favorite recipes and inviting friends and family over to taste the gluten-free versions. Kristin and Baldur live in Arizona with their two boys, Alex and Aron.
