I am not your typical nutrition expert.
Nicknamed “Iron Woman” among my friends, I was considered invincible because of my extreme fitness regimen. I had endless energy and virtually never got sick.
Then I got sick, very sick and lost my Iron Woman title. Inside of a few months I found myself connected to IV’s just to stay alive.
Doctors ran dozens of tests from blood tests, C-scans, MRI’s and still no answers. Modern medicine failed to give me any answers and they were more confused than ever.
My once athletic body was frail, my arms bruised from IV’s, I lost 30 pounds, I saw fear in my father’s eyes while confined to bed in excruciating pain. I began searching for my own answers.

My suspicions were quickly confirmed when I went to a specialist and was diagnosed with Celiac Disease, an autoimmune disorder affecting millions of people worldwide caused by consuming gluten.
Celiac Disease (or Coeliac Sprue) can be fatal; in my case it caused my intestines to shut down and ultimately my body’s ability to absorb water and nutrition so no matter how much I ate I was dying because my body’s immune system was permanently damaged from consuming gluten.
