Author of the "HELP! There's a VEGAN Coming For Dinner!" cookbook series and the "Tall Travel Tales" series.
Often described as colourful and creative, Karen Jennings seems to have lived many different lives. She has been, among other things, a medical research scientist, teacher, artist, stay at home mom, book seller, interior decorator and kitchen designer. Throughout each incarnation she has been at her happiest in the kitchen at the end of a busy day, playing with food. As the main cook in a household containing a tree nut allergy, gluten intolerance, egg intolerance, lactose intolerance, dedicated meat-eaters and a vegan, she long ago accepted that one diet doesn’t fit everyone. She firmly believes that everyone has to walk their own path in life and has the right to chose what to eat while they are walking it. Her personal path began in the north of England, carried her down to the south coast and flew her over the water to Canada in the early 1990’s. She has been eating a plant-based diet since the 1980’s and is still amazed at how many people think vegetarians and vegans eat nothing except lettuce. Her usual response? “Look at me. Do you really think I live on salad?” And then she laughs.
