My object in writing this cookbook is to make food preparation less stressful, more enjoyable. Food should be (1) tasty, (2) healthful, (3) look nice, in just that order.
That, to my mind is true gourmet cooking, and it shouldn't take all your time. I want you to have the pleasure of serving your family and friends nourishing meals that taste good. And I do mean I want it to be a pleasure for you, and not complicated. It just isn't necessary.
I want to emphasize that I am not a trained chef or professional nutritionist. I never went to cooking school or even worked in a restaurant before I opened my own. I am an everyday cook. I grew up in a family of good cooks, my mother and my grandmothers. Many of my recipes come from them. In my cooking, I try to keep a balance between sound nutrition and some indulgence. I do, however, emphasized natural ingredients and fewer processed foods.
It was not always so. I always loved Italian cooking, but when I was first married, having babies and working part-time as a nurse, I was often a "pour a can of soup over the pork shops and stick them in the over" cook. When our son was diagnosed with hyperactivity, we opted to try an all-natural diet as an alternative to drug therapy. This diet, the Feingold Diet, eliminated all artificial preservatives, flavorings, coloring, and salicylates. Since so many prepared foods contain these things, I learned to make everything, from soda crackers to marshmallows, from scratch. I discovered it could be easy and rewarding. In fact, it was the real inspiration for me in starting my restaurant. I learned how simple and enjoyable it was to prepare and share my cooking with others. While not all recipes in this book contain all-natural ingredients, I have tried to use them as much as possible. Recipes that contain all-natural ingredients are marked with an apple. I also include a few low-cholesterol recipes, which are marked with a heart.
I hope that my recipes and methods, as well as my personal experiences, are a help to you in making delicious foods for your own family.
