The following are some suggestions of how you can pair your favorite cheese with wine:

Asiago pairs well with Bardolino

Blue cheese in general pair well with cabernet sauvignon, sauternes, Bordeaux, ports, Madeira, sherry, syrah. Roquefort, a type of blue cheese from France pairs well with vouvray, French red burgundy, cotes du rhone and port. Stilton a blue cheese from England pairs well with English red wine and Port.
