About the Author: Karen Jennings.
Often described as colourful and creative, Karen Jennings seems to have lived many different lives. She has been, among other things, a medical research scientist, teacher, artist, stay at home mom, book seller, interior decorator and kitchen designer. Throughout each incarnation she has been at her happiest in the kitchen at the end of a busy day, playing with food.
As the main cook in a household containing a tree nut allergy, gluten intolerance, egg intolerance and lactose intolerance, she long ago accepted that one diet doesn't fit everyone, although she obviously believes that a vegan diet is the best choice. Best for animals, best for the environment, and best for a healthy, compassionate life.
Karen was born in the north of England but moved numerous times before flying to Canada in the early 1990's. She has been eating a plant-based diet since the 1980's and is still amazed at how many people think vegetarians and vegans eat nothing except lettuce. Her usual response? "Look at me. Do you really think I live on salad?" And then she laughs.
When missing from her kitchen in Ottawa Karen can often be found in airports waiting for a flight. Read about her adventures in the ever expanding "Tall Travel Tales" series.
